Zha Jiang Mian or Beijing Noodles is a traditional Beijing dish full of flavour and freshness.
The literal meaning of Zha Jiang Mian is fried sauce noodles. Popular in Northern regions of China, this dish consists of three components: Pork fried then simmered in a dark, thick and salty sauce, freshly cooked noodles and various types of vegetable.
For the Sauce:
2 Spring Onions Chopped
4 Garlic Gloves Finely Chopped
2 Tablespoons of Ginger Sliced
200g Pork Mincc or Beef Mince
200g Wheat Noodles or your favourite type
Half a Cucumber Sliced to strips

Step by Step Instructions
Step 1 – Make the Sauce
Heat up a sauce pan and add a splash of oil about 2 tbsp. Add pork mince and fry on low heat to bring the fat out of the pork.
Once the pork starts to change colour add in 1 tbsp of Chinese cooking Wine
Then add in the Ginger, Garlic and Spring Onions stir and fry for 1 minute. Add in the mushrooms and mix again frying on medium.
Add a good pinch of salt and fry till everything is soft and cooked.
Add in 2 TBSP of lLght Soy Sauce, 1 TBSP of Dark Soy Sauce and 5 TBSP of Soya Bean Paste give everything a good mix.
Mix together 1 TBSP of Corn Flour and 100ml of cold water and add to the pan to thicken up the sauce.
Once the sauce is thick turn off the heat and let it cool.
Place your cooked noodles in a bowl and top with your Beansprouts, Sliced Cucumber and Cooled Sauce
